MAHÓN GIN IS MADE FOLLOWING THE ONE-SHOT METHOD, WITH LOCAL FIREWOOD USED FOR FUEL.
THE ALCOHOL AND WATER, JUNIPER BERRIES AND OTHER INGREDIENTS ARE PLACED IN THE COPPER ALEMBIC, AND THEN HEATED. THE VAPOR TURNS INTO A SPIRIT OF ABOUT 50% ABV, EXTRACTING THEIR ESSENTIAL OILS AND AROMAS.
DISTILLATION LASTS AROUND 9 HOURS, AND ONLY THE HEART IS KEPT. THE SPIRIT IS FINALLY DILUTED DOWN, AND FILTERED OF IMPURITIES. NO FLAVOURS OR ESSENCES ARE ADDED.
